Heute m\u00f6chte ich euch wieder mal einige Geschichten aus meiner K\u00fcche erz\u00e4hlen, wo es in den letzten Wochen und Monaten nicht nur Mango gab.<\/p>\n\n\n\n<p>Durch die seit Ende Mai tobende Regenzeit, hat sich auch mein Tagesrhythmus wieder drastisch ver\u00e4ndert. Die verregneten Nachmittage nutze ich nun oft f\u00fcr Dinge, f\u00fcr die ich w\u00e4hrend des panamesischen Sommers weder Lust noch Zeit aufbringen konnte. Dazu geh\u00f6rt auf jeden Fall das Kochen in gro\u00dfen Mengen.<\/p>\n\n\n\n<p>Und los ging das mit den eben erw\u00e4hnten Mangos, die ich bei einem Spaziergang zuf\u00e4llig auf dem Paraiso Gel\u00e4nde entdeckte. Ein sch\u00f6ner alter Mangobaum, so voll beh\u00e4ngt mit Fr\u00fcchten, dass sich seine \u00c4ste durchbogen. Eine Gelegenheit die ich mir nicht entgehen lassen konnte. Leichter zu verarbeiten sind sie so auch. Im ersten Schritt sch\u00e4lte ich die Fr\u00fcchte, um anschlie\u00dfend das Fruchtfleisch vom Kern zu l\u00f6sen. Dabei ist es wichtig nicht zu viel abzuschneiden, denn die rauen Fasern um den Kern werden auch beim Kochen nicht weich und verbleiben als st\u00f6rende Fremdk\u00f6rper im Essen.<\/p>\n\n\n\n<p>Als erstes probierte ich ein sogenanntes Mango Chutney. Eine Gew\u00fcrzso\u00dfe indischen Ursprungs, die heute auch in vielen westlichen L\u00e4ndern beliebt ist. Die kleingehackten Mango St\u00fccke verkochte ich zusammen mit ein bisschen Zucker, Essig, Zwiebeln und jeder Menge Gew\u00fcrzen. Das Ergebnis war durchaus essbar und l\u00e4sst sich mit vielen Speisen kombinieren. Die Woche drauf fuhr ich erneut zum Paraiso und holte noch mehr Mangos.<\/p>\n\n\n\n<p>Diesmal wollte ich eine Mango Marmelade probieren. Eigentlich recht simpel, wobei selbst die einfachsten Zutaten in Panama schwer zu bekommen sind. Gelierzucker ist g\u00e4nzlich unbekannt und auch geschmacksneutrale Gelatine findet man nicht in jedem Gesch\u00e4ft. Von Pektin oder anderen Alternativen mal ganz abgesehen. Die Marmelade gelang trotzdem ganz gut und den Einmachgl\u00e4sern spendierte ich sogar noch ein paar h\u00fcbsche Etiketten, bevor ich sie in der Nachbarschaft verteilte.<\/p>\n\n\n\n<p>Alle guten Dinge sind drei, so sagt man. Also holte ich nochmal einen gro\u00dfen Sack Mangos und wollte was Neues ausprobieren. Es sollte nicht so s\u00fc\u00df sein wie Marmelade, nicht so w\u00e4ssrig wie ein Mus aber auch nicht so pampig wie ein Brei. Gut das ich kiloweise davon hatte. Wegen dem geringen Zuckeranteil w\u00e4re die Masse im K\u00fchlschrank wohl nicht lange haltbar gewesen, weshalb ich sie gleich in S\u00e4ckchen abf\u00fcllte und in den Tiefk\u00fchler stapelte. Und dort sollten sie nicht lange alleine bleiben.<\/p>\n\n\n\n<p>Die Mango Ernte im Paraiso war zwar mittlerweile vorbei, doch meine Bolognese Vorr\u00e4te waren auch fast aufgebraucht. H\u00f6chste Zeit f\u00fcr eine neue Charge. Es war zwar nicht meine erste Bolognese, doch dieses Mal probierte ich es mit einer Schritt f\u00fcr Schritt Anleitung aus der alten Heimat. Mangels identischer Zutaten war auch das im Detail wieder etwas schwierig.<\/p>\n\n\n\n<p>Mit den knapp 7kg fertiger Bolognese war ich trotzdem h\u00f6chst zufrieden und f\u00fcllte auch diese in zahlreiche S\u00e4ckchen f\u00fcr den Tiefk\u00fchler. Die Mango hat jetzt gute Gesellschaft und wartet mit vielen anderen K\u00f6stlichkeiten nur darauf, dass ich die Tiefk\u00fchlt\u00fcr aufmache und mir was aussuche. Tja, immer mit dem geringsten Aufwand.<\/p>\n\n\n\n<p>So ziemlich genau das Gegenteil davon hat sich unser Alex vorgenommen. Bereits zum dritten oder vierten Mal war er nun zu Besuch in Santa Fe, wo er uns aus einem mir unbekannten Grund ganz spektakul\u00e4r kulinarisch verw\u00f6hnen wollte. Dazu hat er wirklich keine M\u00fchen gescheut. Aus Deutschland eingeflogenes Koch Equipment war dabei nur der Anfang.<\/p>\n\n\n\n<p>Klar, wer kocht denn heutzutage noch ohne Infrarotthermometer und futuristisch aussehendem Temperierger\u00e4t? Auch die Zutaten hat Alex mit Unterst\u00fctzung von Sven und Lisa aus dem ganzen Land zusammengesucht. Schnell wurde klar: Wenn man sich nur lange genug Zeit nimmt, kann man fast alles in Panama bekommen. Dass es die gew\u00fcnschten Wachteleier zu Ostern dann sogar in der Cooperativa in Santa Fe gab, war wirklich pures Gl\u00fcck.<\/p>\n\n\n\n<p>Was genau Alex f\u00fcr uns alles gezaubert hat wei\u00df ich ehrlich gesagt gar nicht mehr. Es war schlicht und einfach zu viel und zu ausgefallen um mir alles zu merken. Aber es hei\u00dft ja auch ein Bild sagt mehr als tausend Worte. In diesem Sinne m\u00f6chte ich diesen Beitrag mit einer Bildergalerie und sch\u00f6nen Gr\u00fc\u00dfen an Alex abschlie\u00dfen.
